New way of cooking rice may stem Obesity

As rice is the main Indian Staple, everyone likes to eat rice daily. As a cup of rice has about 200 calories, many find ways to reduce its consumption. In case of obese patients, it is much harder to cut the calories without eating rice.

The researchers have found that Rice can also be a slimming dish if you are willing to cook in a new manner. “Sri Lankan scientists have discovered that cooking rice with a teaspoon of coconut oil then refrigerating it for 12 hours more than halves the number of calories absorbed by the body”.

"Because obesity is a growing health problem, especially in many developing countries, we wanted to find food-based solutions," said team leader Sudhair A James from the College of Chemical Sciences, Colombo, Sri Lanka. "We discovered that increasing rice resistant starch (RS) concentrations was a novel way to approach the problem," he said.

This simple preparation trick converts digestible starch into "resistant starch." The starch your body doesn't need becomes "indigestible, so it passes through the body without becoming fat."
